Traditional Gazpacho

A refreshing, chilled Andalusian soup made from blended raw vegetables, perfect for hot summer days.

Ingredients

  • 1 kg ripe Roma or vine tomatoes (cored)
  • 1 small cucumber (peeled and seeded)
  • 1/2 green bell pepper
  • 1/4 small white onion
  • 1 clove garlic
  • 3 tbsp extra virgin olive oil
  • 1 tbsp sherry vinegar
  • Salt, cold water (optional, for consistency)

Instructions

Roughly chop the tomatoes, cucumber, bell pepper, onion, and garlic.

Place all the vegetables in a high-powered blender and blend until completely smooth.

While the blender is running, slowly drizzle in the olive oil and sherry vinegar. The olive oil will emulsify and give the soup a creamy texture.

Season with salt to taste. If the gazpacho is too thick, add a little cold water.

Chill in the refrigerator for at least 2 hours before serving. Garnish with a drizzle of olive oil and finely diced vegetables.
