Classic French Onion Soup (Soupe à l'Oignon)
A comforting traditional soup made with deeply caramelized onions, rich beef broth, and topped with toasted bread and melted Gruyère cheese.
Ingredients
- 5 large yellow onions (thinly sliced)
- 3 tbsp butter
- 1 tbsp olive oil
- 6 cups beef broth
- 1/2 cup dry white wine
- 1 baguette (sliced)
- 1.5 cups grated Gruyère cheese
- Salt, black pepper, fresh thyme

Melt butter and olive oil in a large pot over medium heat. Add the sliced onions and cook slowly until deeply browned and caramelized (about 40 minutes).

Deglaze the pot with the white wine, scraping up any browned bits.

Add the beef broth and thyme, bring to a simmer, and cook for 15-20 minutes. Season with salt and pepper.
