Patatas Bravas

Crispy fried potato cubes topped with a spicy, smoky paprika sauce. A classic Spanish tapas dish.

Ingredients

  • 4 medium potatoes (peeled and cut into bite-sized cubes)
  • Olive oil for frying
  • Salt
  • For the bravas sauce: 2 tbsp olive oil, 1 tbsp flour, 1 tbsp sweet smoked paprika, 1 tsp spicy smoked paprika, 1 cup vegetable or chicken broth

Instructions

Make the sauce: Heat olive oil in a small pan, stir in the flour and cook for 1 minute. Remove from heat, whisk in both paprikas, then gradually whisk in the broth. Return to heat and simmer until thickened. Season with salt.

Heat a generous amount of olive oil in a deep frying pan over medium-low heat. Add the potato cubes and poach them gently until tender inside (about 10 minutes).

Remove the potatoes with a slotted spoon. Turn the heat up to high.

Return the potatoes to the very hot oil and fry until crispy and golden brown on the outside. Drain on paper towels and salt immediately.

Serve the crispy potatoes drizzled generously with the warm bravas sauce.
