Churros con Chocolate
Crispy, star-shaped fried dough served with an incredibly thick and rich dark hot chocolate for dipping.
Ingredients
- For Churros: 1 cup water, 1 cup all-purpose flour, 1 tbsp olive oil, 1/2 tsp salt, sugar for dusting, oil for frying
- For Chocolate: 2 cups whole milk, 200g high-quality dark chocolate (chopped), 1 tbsp cornstarch dissolved in 2 tbsp water, 2 tbsp sugar

Make the chocolate: Heat the milk and sugar in a saucepan. Add the chopped chocolate and whisk until melted. Stir in the dissolved cornstarch and simmer until the chocolate is very thick and glossy. Keep warm.

Make the churro dough: In a saucepan, bring the water, oil, and salt to a boil. Remove from heat, add the flour all at once, and stir vigorously with a wooden spoon until it forms a smooth, sticky ball of dough.

Transfer the slightly cooled dough to a piping bag fitted with a large star nozzle.

Heat about 2 inches of oil in a deep frying pan to 190°C (375°F). Carefully pipe 6-inch strips of dough into the hot oil, cutting the ends with scissors.

Fry until golden brown and crispy on all sides. Drain on paper towels, roll in sugar, and serve immediately alongside the thick hot chocolate for dipping.
