Gambas al Ajillo (Garlic Shrimp)

A sizzling, intensely flavorful tapas dish of shrimp cooked in olive oil with loads of garlic and a touch of chili.

Ingredients

  • 300g large raw shrimp or prawns (peeled and deveined)
  • 6 cloves garlic (thinly sliced)
  • 1/2 cup extra virgin olive oil
  • 1-2 dried cayenne chilies (or red pepper flakes)
  • 1 tbsp fresh parsley (chopped)
  • Salt
  • Crusty bread for dipping

Instructions

Pat the shrimp completely dry with paper towels and season with salt.

In a traditional terracotta dish or a small skillet, heat the olive oil over medium heat. Add the sliced garlic and dried chilies.

Cook until the garlic just begins to turn golden brown and fragrant (do not let it burn).

Immediately add the shrimp to the sizzling oil. Cook for about 1-2 minutes per side until they turn pink and opaque.

Remove from heat, sprinkle with fresh parsley, and serve immediately while the oil is still bubbling, with plenty of bread to soak up the garlic oil.
