Quiche Lorraine
A savory French tart featuring a buttery, flaky crust filled with a rich custard of eggs, cream, cheese, and smoky bacon.
Ingredients
- 1 sheet of shortcrust pastry (pâte brisée)
- 200g smoked bacon (lardons)
- 4 large eggs
- 1 cup heavy cream
- 1/2 cup whole milk
- 1 cup shredded Gruyère cheese
- Pinch of nutmeg, salt, black pepper

Preheat the oven to 190°C (375°F). Line a tart pan with the pastry, prick the base with a fork, and blind bake for 10-15 minutes.

Fry the bacon lardons until crispy, then drain the excess fat. Scatter them evenly over the partially baked crust.

Sprinkle the shredded Gruyère cheese over the bacon.

In a bowl, whisk together the eggs, cream, milk, nutmeg, salt, and pepper. Pour this custard mixture into the tart shell.
