Tortilla Española (Spanish Omelette)

A staple of Spanish cuisine, this thick, comforting omelette is made simply with potatoes, onions, eggs, and olive oil.

Ingredients

  • 4 large potatoes (peeled and thinly sliced)
  • 1 large onion (thinly sliced)
  • 6 large eggs
  • 2 cups extra virgin olive oil (for frying)
  • Salt

Instructions

Heat the olive oil in a large frying pan. Add the potatoes and onions, cooking slowly over medium-low heat until they are very tender but not browned (about 15-20 minutes).

Drain the potatoes and onions in a colander, reserving a little of the oil.

Beat the eggs in a large bowl and season generously with salt. Gently fold in the warm potato and onion mixture. Let it rest for 10 minutes.

Heat a tablespoon of the reserved oil in a non-stick pan over medium-high heat. Pour in the egg mixture and cook until the bottom is set and lightly browned.

Place a large plate over the pan, quickly flip the tortilla onto the plate, and slide it back into the pan to cook the other side. Serve warm or at room temperature.
