Coq au Vin
A classic rustic French chicken stew braised in red wine with mushrooms, crispy bacon, and pearl onions.
Ingredients
- 1 whole chicken (cut into 8 pieces) or 4 large chicken legs
- 150g bacon lardons
- 1 bottle red wine
- 1 cup chicken broth
- 250g cremini mushrooms
- 1 cup pearl onions (peeled)
- 2 cloves garlic, fresh thyme, 1 bay leaf
- 2 tbsp butter, 2 tbsp flour
Instructions

Cook the bacon in a heavy pot until crisp. Remove and set aside. Brown the chicken pieces in the bacon fat, then remove.

Sauté the pearl onions and mushrooms until browned, then set them aside with the bacon.

Add garlic to the pot, then return the chicken. Pour in the wine and broth, and add the herbs.

Simmer covered for 45-50 minutes until the chicken is cooked through.

Knead the butter and flour together (beurre manié) and whisk it into the sauce to thicken it. Return the bacon, onions, and mushrooms to the pot and simmer for 5 more minutes.
