Traditional Ratatouille
A vibrant, rustic Provençal vegetable stew featuring eggplant, zucchini, bell peppers, and fresh tomatoes.
Ingredients
- 1 large eggplant (diced)
- 2 zucchini (diced)
- 2 bell peppers (red and yellow, diced)
- 4 ripe tomatoes (chopped)
- 1 large onion (chopped)
- 3 cloves garlic (minced)
- 1/4 cup olive oil
- Herbes de Provence, salt, black pepper
Instructions

Heat a few tablespoons of olive oil in a large pot or Dutch oven. Sauté the eggplant until soft and browned, then remove and set aside.

Add a little more oil and sauté the zucchini and bell peppers until tender. Remove and set aside.

Sauté the onion and garlic until translucent. Add the chopped tomatoes and herbes de Provence, simmering until the tomatoes break down into a sauce.

Return all the cooked vegetables to the pot, cover, and let them simmer gently together for 15-20 minutes so the flavors meld.
