Crème Brûlée
A luxurious and classic French dessert consisting of a rich vanilla custard base topped with a contrasting layer of hard caramelized sugar.
Ingredients
- 2 cups heavy cream
- 1 vanilla bean (split and seeds scraped) or 1 tbsp vanilla paste
- 5 large egg yolks
- 1/2 cup granulated sugar
- 4 tbsp superfine or granulated sugar (for the caramelized topping)

Preheat the oven to 160°C (325°F). Heat the heavy cream and vanilla bean/seeds in a saucepan until it just begins to simmer, then remove from heat and let it steep for 10 minutes.

In a bowl, whisk the egg yolks and 1/2 cup of sugar until pale and slightly thickened.

Slowly pour the warm cream into the egg yolk mixture while whisking constantly (tempering the eggs).

Pour the custard through a fine-mesh sieve to remove any lumps, then divide the liquid among 4 ramekins.

Place the ramekins in a baking dish and fill the dish with boiling water halfway up the sides of the ramekins. Bake for 30-35 minutes until the edges are set but the center still jiggles slightly. Chill in the fridge for at least 4 hours.

Before serving, sprinkle 1 tablespoon of sugar evenly over each custard. Use a kitchen blowtorch to melt and caramelize the sugar until it forms a hard amber crust.
